It’s easy to make ahead and reheats really well.

I just brown up some breakfast sausage, add hash browns, scramble in a few eggs, then mix in Hatch green chiles and any cheese I have on hand. Today I use pepper jack.

A hand places seasoned sausage, egg and hash brown filling onto an open flour tortilla ready to be rolled.

Creamy Green Chile Sauce

Roll everything up in tortillas, then pour over a quick creamy green chile sauce made with butter, flour, milk, another can of green chiles, and my favorite spices:

Creamy white green chile sauce is being poured from a pot over rolled tortillas lined up in a baking dish.
  • Garlic powder
  • Onion powder
  • Pepper
  • Just a pinch of cumin

Top with more cheese and bake until it’s hot and bubbly.

A spatula lifts a golden, cheesy baked enchilada out of the pan showing the finished dish fresh from the oven.
