Curried Chicken Salad

A ridiculously easy curry chicken salad made with shredded rotisserie chicken, crunchy veggies, walnuts, and sweet grapes, all mixed with a creamy curry mayo dressing.

Ingredients
  

  • 1 whole* rotisserie chicken skin removed, meat shredded
  • 1/2 cup* white onion diced
  • 1 cup* celery chopped
  • 1/2 cup* walnuts
  • 1 cup* green grapes sliced
  • 2 tablespoons* olive oil
  • 1/2 cup* mayo
  • 1 tablespoon* curry powder
  • to taste salt and pepper

Method
 

  1. Start with a rotisserie chicken, pull the skin off, and shred all of the meat into a bowl.
  2. Add diced white onion, chopped celery, walnuts, and sliced green grapes.
  3. Mix in olive oil, mayo, curry powder, salt and pepper to taste.
  4. That’s it – stir until everything is well combined and creamy.
  5. Serve on a sandwich, in a croissant, over greens, or straight out of the bowl.

Preparing the Ingredients

Start with a rotisserie chicken, pull the skin off, shred all of the meat into a bowl. Add:

Mix in olive oil, mayo, curry powder, salt, and pepper to taste, and that’s it.
