As a busy stay-at-home mom, I am always looking for simplicity in the kitchen. Balancing motherhood, fitness, and everyday life means I need meals that are quick, healthy, and—most importantly—food my kids will actually eat. This super simple Greek bowl recipe is one you are going to want to save. It is a refreshing, healthy go-to for summer nights that comes together in a flash.

Quick Air Fryer Chicken
The protein for this bowl is incredibly easy. First, you are going to chop up chicken breasts into bite-sized pieces and get them right into the air fryer. I always like to use a liner in my basket to make cleanup a little bit easier.
Spread your chopped chicken evenly on the bottom of the basket and mist it with some vegetable oil spray. Season it simply with garlic salt and pepper, and close it up. We are going to air fry this at 425 degrees for 12 minutes, making sure to flip the pieces halfway through so they cook evenly.
Fresh Veggies and Simple Sides
While the chicken cooks, you have the perfect window to chop up your veggies. I like to go with an English cucumber and a fresh tomato. Just chop them up into bite-sized pieces so they are easy for the whole family to eat.

For the base, I use a simple jasmine rice. To keep things as easy as possible, I like to go with Ben’s Original. It takes just 90 seconds in the microwave, and you’re done!
How to Build Your Greek Bowl
Now let’s build the bowl. I like to measure out my portions to keep my fitness goals on track, but you can easily adjust these amounts for your family’s appetite:
- The Base: Start with half a cup of the cooked jasmine rice.
- The Protein: Add about five ounces of your air-fried chicken.
- The Veggies: Top generously with your chopped cucumber and tomato.
- The Flavor: Nothing screams Greek food more than tzatziki sauce! Add two tablespoons of tzatziki.
- The Finish: Top it all off with two tablespoons of feta cheese.
This is the perfect healthy summer bowl. It is light, packed with protein, and completely customizable for picky eaters. Everyone in the house is going to love and enjoy this one!
