Wild West Shrimp

Ingredients
  

  • 1 1/2 pounds large shrimp peeled and deveined
  • 2 tablespoons vegetable oil
  • 1/2 cup sweet chili sauce
  • 2 tablespoons honey
  • 1 tablespoon sriracha sauce
  • 1 tablespoon lime juice
  • 2 cloves garlic minced
  • 1/4 teaspoon cayenne pepper
  • 2 cups shredded iceberg lettuce
  • 2 tablespoons chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. In a medium bowl, whisk together sweet chili sauce, honey, sriracha, lime juice, minced garlic, and cayenne pepper until well combined. Set aside.
  2. Pat shrimp completely dry with paper towels to ensure they sear properly.
  3. Heat vegetable oil in a large skillet over medium-high heat until shimmering.
  4. Add shrimp in a single layer and cook for 2-3 minutes per side until pink and just cooked through.
  5. Pour the prepared sauce over the cooked shrimp and toss to coat evenly, cooking for an additional 1-2 minutes until sauce is heated through and slightly thickened.
  6. Arrange shredded lettuce on a serving platter and top with the glazed shrimp.
  7. Garnish with fresh cilantro and serve immediately with lime wedges on the side.
