T-Bone Steak

Ingredients
  

  • 2 T-bone steaks about 1.5 inches thick, 16-20 ounces each
  • 2 tablespoons vegetable oil
  • 2 teaspoons coarse salt
  • 1.5 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 4 tablespoons unsalted butter
  • 3 sprigs fresh thyme

Method
 

  1. Remove steaks from refrigerator 30 minutes before cooking to bring to room temperature.
  2. Pat steaks completely dry with paper towels, then brush both sides lightly with vegetable oil.
  3. In a small bowl, combine salt, black pepper, garlic powder, and onion powder, then generously season both sides of each steak.
  4. Heat a cast-iron skillet over high heat until smoking hot, about 5 minutes.
  5. Place steaks in the skillet and cook without moving for 4-5 minutes until a deep brown crust forms.
  6. Flip steaks and cook for another 4-5 minutes for medium-rare, or until desired doneness is reached.
  7. Add butter and thyme sprigs to the pan, tilting the skillet and spooning the melted butter over the steaks for 1 minute.
  8. Remove steaks from skillet and let rest on a cutting board for 5-10 minutes before serving.
  9. Serve with the pan butter drizzled over the top.
