Strawberry Swirl Cheesecake Squares

Smooth baked cheesecake squares with strawberry puree swirled through the batter.

Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 0.25 cup sugar for crust
  • 16 oz cream cheese softened
  • 0.5 cup sugar for filling
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup strawberries pureed
  • 2 tbsp sugar for swirl

Method
 

  1. Heat oven to 325F and line a 9x9 pan with parchment.
  2. Combine crumbs, butter, and 1/4 cup sugar, press into the pan, and bake 8 minutes.
  3. Simmer strawberry puree with 2 tbsp sugar until slightly thickened, then cool.
  4. Beat cream cheese and 1/2 cup sugar smooth, then add eggs and vanilla.
  5. Pour filling over the crust, then dollop strawberry puree on top and swirl with a knife.
  6. Bake 28 to 30 minutes until set with a slight jiggle in the center.
  7. Cool, then chill at least 4 hours before slicing.

Notes

Don't over-swirl or the marbling turns muddy pink.
