Strawberry Shortcake Cheesecake Bars

Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 0.25 cup sugar for crust
  • 16 oz cream cheese softened
  • 0.5 cup sugar for filling
  • 2 eggs
  • 1 tsp vanilla extract
  • 1.5 cups strawberries diced
  • 0.75 cup flour for topping
  • 4 tbsp butter cold, for topping
  • 3 tbsp sugar for topping

Method
 

  1. Heat oven to 325F and line a 9x9 pan with parchment.
  2. Mix crumbs, butter, and 1/4 cup sugar, press into the pan, and bake 8 minutes.
  3. Beat cream cheese and 1/2 cup sugar smooth, then add eggs and vanilla.
  4. Pour over the crust and scatter diced strawberries on top.
  5. Rub flour, cold butter, and 3 tbsp sugar into coarse crumbs and sprinkle over the filling.
  6. Bake 30 to 32 minutes until the topping is golden and the center is set.
  7. Cool, then chill at least 4 hours before slicing.

Notes

The crumb topping crisps up more as the bars chill.
