Strawberry Ripple Cheesecake

A smooth baked cheesecake with a fresh strawberry puree ripple for a berry sweet dessert.

Ingredients
  

  • 1.75 cups graham cracker crumbs
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 1.5 cups fresh strawberries pureed
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 325 degrees F and press the crumbs into a springform pan.
  2. Cook the strawberry puree with a spoon of sugar until slightly thickened, then cool.
  3. Beat the cream cheese and sugar until smooth and add the eggs one at a time.
  4. Pour the batter over the crust and drop spoonfuls of strawberry sauce over the top.
  5. Swirl gently with a skewer to create ripples.
  6. Bake for 55 to 60 minutes until set, then cool and chill 4 hours before serving.

Notes

Strain the puree if you prefer it seedless.
