Strawberry Lime Cheesecake Bars

Cheesecake bars with a zesty lime flavor and fresh strawberries with buttery graham crust.

Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 0.25 cup sugar for crust
  • 16 oz cream cheese softened
  • 0.5 cup sugar for filling
  • 2 eggs
  • 3 tbsp lime juice
  • 1 tbsp lime zest
  • 2 cups strawberries diced
  • 3 tbsp sugar for topping

Method
 

  1. Heat oven to 325F and line a 9x9 pan with parchment.
  2. Mix crumbs, butter, and 1/4 cup sugar, press into the pan, and bake 8 minutes.
  3. Beat cream cheese and 1/2 cup sugar smooth, then add eggs, lime juice, and zest.
  4. Pour over the crust and bake 28 to 30 minutes until just set.
  5. Toss diced strawberries with 3 tbsp sugar and let them release their juices.
  6. Spoon the macerated strawberries over the cooled cheesecake.
  7. Chill at least 4 hours before slicing into bars.

Notes

Add a pinch of extra lime zest on top for a fragrant finish.
