Spicy Tofu Pasta

A quick, beginner-friendly pasta dish featuring extra firm tofu, green chilies, and tomato basil sauce.
Servings: 4 servings

Ingredients

  • 16 oz extra firm tofu package
  • 24 oz tomato basil garlic pasta sauce jar, or your preferred sauce (use about half, or more to taste)
  • 10 oz tomatoes and green chilies can (popularly known as Rotel)
  • 16 oz whole wheat penne pasta box, or pasta of your choice (use 3 cups)
  • 1 pinch salt
  • 1 pinch pepper
  • 3 pinches garlic powder
  • 4 cups water

Method

  1. Boil 4 cups water in a 2-quart saucepan.
  2. Add 3 cups pasta.
  3. Cook, stirring, until tender; remove from heat.
  4. Drain pasta; set aside.
  5. Drain tofu; place in a large frying pan.
  6. Break up tofu with a spatula. Cook over medium heat about 5 minutes, stirring constantly.
  7. Mix in a pinch each salt and pepper, and 3 pinches garlic powder.
  8. Mix in the 10oz can of tomatoes and green chilies.
  9. Stir in about half the 24oz jar of sauce until heated through.
  10. Turn off heat; pour tofu sauce over pasta.

Notes

This is good to eat with a salad or steamed veggies; I would personally choose steamed broccoli! If you would prefer, you could use ground turkey or ground beef instead of tofu; be sure to cook your choice of meat thoroughly! I only use half of the jar of sauce, but if you could use more if you would like a saucier sauce.
Total time: 15 minutes.
