Spicy Sausage Stuffed Peppers

These festive little bites are absolute party pleasers! They're the perfect combination of sweet mini peppers and savory spiced sausage, topped with melty cheese. Your guests will be reaching for seconds (and thirds!) all night long.

Ingredients
  

  • 12 mini sweet peppers halved lengthwise and seeded
  • 1 pound spicy Italian sausage casings removed
  • 4 ounces cream cheese softened
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons fresh parsley chopped
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper for easy cleanup.
  2. In a large skillet over medium heat, cook the sausage until browned and crumbly, about 6-8 minutes. Drain any excess grease and let it cool slightly.
  3. In a mixing bowl, combine the cooked sausage, cream cheese, mozzarella, Parmesan, garlic, red pepper flakes, and oregano. Mix until everything is well combined.
  4. Arrange the pepper halves on your prepared baking sheet, cut side up.
  5. Spoon the sausage mixture generously into each pepper half, mounding it slightly.
  6. Sprinkle the panko breadcrumbs over the top of each stuffed pepper for a nice golden crunch.
  7. Bake for 20-25 minutes until the peppers are tender and the tops are golden brown.
  8. Let them cool for 5 minutes, then garnish with fresh parsley before serving warm.
