In a large skillet over medium-high heat, brown the ground venison, breaking it apart as it cooks, about 8-10 minutes. Drain any excess fat.
Add the diced onion and minced garlic to the skillet and cook for 3-4 minutes until softened and fragrant.
Transfer the venison mixture to your slow cooker.
Add the kidney beans, crushed tomatoes, tomato paste, beef broth, chili powder, cumin, smoked paprika, salt, and black pepper. Stir everything together until well combined.
Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, stirring occasionally if possible.
Taste and adjust seasonings as needed before serving.
Serve hot with your favorite toppings like shredded cheese, sour cream, diced onions, and jalapeños.
