Savory Prosciutto-Wrapped Asparagus

These elegant little bundles are so simple but taste like you spent hours in the kitchen! The salty prosciutto gets crispy in the oven while the asparagus stays perfectly tender. They're fancy enough for your grown-up guests but my kids gobble them up too!

Ingredients
  

  • 24 asparagus spears woody ends trimmed
  • 12 slices prosciutto cut in half lengthwise
  • 2 tablespoons olive oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons Parmesan cheese freshly grated
  • 1 teaspoon lemon zest
  • Fresh cracked black pepper for garnish

Method
 

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper for easy cleanup.
  2. Wash the asparagus spears and pat them completely dry with paper towels so the prosciutto will stick properly.
  3. In a small bowl, whisk together the olive oil, black pepper, and garlic powder.
  4. Lightly brush each asparagus spear with the seasoned olive oil mixture.
  5. Take one strip of prosciutto and wrap it around one asparagus spear in a spiral, starting at the bottom and working your way up, leaving the tip exposed.
  6. Place the wrapped asparagus on the prepared baking sheet, seam side down, and repeat with remaining spears.
  7. Bake for 12-15 minutes until the prosciutto is crispy and the asparagus is tender when pierced with a fork.
  8. Remove from oven and immediately drizzle with fresh lemon juice, then sprinkle with Parmesan cheese and lemon zest.
  9. Arrange on a serving platter and add a few grinds of fresh black pepper before serving warm or at room temperature.
