Salmon with Dill Yogurt Sauce

Ingredients
  

  • 4 salmon fillets 6 ounces each, skin on or off
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup plain Greek yogurt
  • 3 tablespoons fresh dill chopped
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic minced
  • 1/2 teaspoon lemon zest

Method
 

  1. Preheat oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
  2. Pat salmon fillets dry and place them on the baking sheet, then brush with olive oil and season with salt and pepper.
  3. Bake for 10-12 minutes until salmon is cooked through and flakes easily with a fork.
  4. While salmon cooks, prepare the sauce by combining Greek yogurt, fresh dill, lemon juice, garlic, and lemon zest in a small bowl.
  5. Stir the sauce well and season with a pinch of salt to taste.
  6. Remove salmon from oven and serve immediately with a generous dollop of dill yogurt sauce on top or on the side.
