Red Velvet Cheesecake

A vivid red velvet cheesecake featuring a hint of cocoa and crowned with a cream cheese swirl.

Ingredients
  

  • 2 cups chocolate cookie crumbs
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 2 tbsp cocoa powder
  • 1 tbsp red food coloring

Method
 

  1. Preheat the oven to 325 degrees F and press the cookie crumbs into a springform pan.
  2. Beat the cream cheese and sugar until smooth.
  3. Mix in the cocoa powder and red food coloring until evenly colored.
  4. Add the eggs one at a time on low speed.
  5. Pour over the crust and bake for 60 to 65 minutes until set.
  6. Cool, chill at least 4 hours, then top with cream cheese frosting before serving.

Notes

Gel food coloring gives the deepest red without thinning the batter.
