Quick Cranberry Brie Bites Delight

These little bites of heaven are my go-to when I need something impressive but don't have all day to spend in the kitchen! The combination of buttery puff pastry, creamy brie, and tart cranberry sauce is absolutely divine. Trust me, these disappear faster than you can say "Merry Christmas!"

Ingredients
  

  • 1 package 17.3 oz frozen puff pastry sheets, thawed
  • 8 oz brie cheese cut into 24 small cubes
  • 1/2 cup cranberry sauce homemade or canned
  • 1/4 cup chopped pecans
  • 2 tablespoons honey
  • 1 tablespoon fresh rosemary finely chopped
  • 1 egg beaten
  • 1 tablespoon water
  • Fresh thyme sprigs for garnish optional

Method
 

  1. Preheat your oven to 400°F and lightly grease a mini muffin tin with cooking spray.
  2. Roll out the puff pastry sheets on a lightly floured surface and cut into 24 squares (about 2 inches each).
  3. Gently press each pastry square into the muffin cups, allowing the corners to stick up slightly for that pretty rustic look.
  4. Place one cube of brie in the center of each pastry cup.
  5. Top each brie cube with about 1 teaspoon of cranberry sauce and a few chopped pecans.
  6. Mix the beaten egg with water and lightly brush the edges of the pastry.
  7. Bake for 12-15 minutes until the pastry is golden brown and puffed up beautifully.
  8. Remove from oven and immediately drizzle with honey and sprinkle with fresh rosemary.
  9. Let cool for 3-4 minutes before removing from the tin (they'll be crazy hot!).
  10. Serve warm and watch them vanish!
