Pumpkin Spice Sour Cream Cheesecake

This cheesecake has deliciously warm notes of pumpkin spice and is enhanced with the addition of sour cream. It also has a crumbly gingersnap and graham cracker crust.

Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 eggs
  • 1 cup pumpkin puree
  • 2 tsp pumpkin pie spice

Method
 

  1. Press the crumb mixture into a pan and chill.
  2. Beat the cream cheese and sugar until smooth.
  3. Mix in the sour cream, pumpkin puree, and spice.
  4. Add the eggs one at a time, then pour over the crust.
  5. Bake at 325F for 75 minutes until the edges are set.
  6. Cool and chill at least 4 hours before serving.

Notes

A dollop of whipped cream and a dash of cinnamon finishes it nicely.
