Oreo Cheesecake Bites

Single mini cheesecakes baked over a whole sandwich cookie crust and cookie pieces mixed in.

Ingredients
  

  • 12 chocolate sandwich cookies whole
  • 16 oz cream cheese softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 8 chocolate sandwich cookies crushed

Method
 

  1. Preheat the oven to 325 degrees F and line a muffin tin with paper liners.
  2. Place one whole cookie in the bottom of each liner.
  3. Beat the cream cheese and sugar until smooth, then add the eggs and vanilla.
  4. Fold in the crushed cookies.
  5. Spoon the batter over the whole cookies, filling each cup.
  6. Bake for 18 to 20 minutes until set, then cool and chill 2 hours before serving.

Notes

Use paper liners so the bites pop right out.
