No-Bake Peppermint Icebox Cookies

Ingredients
  

  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1 teaspoon peppermint extract
  • 40 chocolate sandwich cookies
  • 1/2 cup crushed candy canes
  • 1/4 cup mini chocolate chips

Method
 

  1. Whip heavy cream, powdered sugar, and peppermint extract together until stiff peaks form.
  2. Line a 9x5-inch loaf pan with plastic wrap, leaving overhang.
  3. Spread a thin layer of whipped cream on the bottom of the pan.
  4. Add a single layer of whole chocolate sandwich cookies, then spread a generous layer of whipped cream over them.
  5. Repeat layering cookies and whipped cream until the pan is full, finishing with a whipped cream layer.
  6. Scatter crushed candy canes and mini chocolate chips over the top.
  7. Cover and freeze overnight. Lift out using plastic wrap and slice into 1-inch slices to serve.
