No-Bake Chocolate Oatmeal Cookies

These are technically a cookie but you make them entirely on the stovetop and they set up on the counter — no oven required. They're the fastest homemade cookie you can make and kids love watching the chocolate mixture bubble before scooping. The key is boiling for a full minute so they set properly

Ingredients
  

  • 2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup whole milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups quick-cooking oats
  • 1/2 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. Combine sugar, butter, milk, and cocoa powder in a medium saucepan over medium heat, stirring constantly.
  2. Bring to a full rolling boil and let boil for exactly 1 minute without stirring.
  3. Remove from heat and quickly stir in oats, peanut butter, vanilla, and salt until fully combined.
  4. Drop heaping spoonfuls onto a parchment-lined baking sheet.
  5. Let cool at room temperature for at least 30 minutes until cookies set completely.
