New York-Style Cheesecake

An ultra creamy dense cheesecake that has a rich filling and tangy topping, and a buttery graham cracker crust.

Ingredients
  

  • 2 cups graham cracker crumbs
  • 32 oz cream cheese softened
  • 1.5 cups sugar
  • 4 eggs
  • 1/2 cup sour cream
  • 1 tbsp vanilla extract

Method
 

  1. Preheat the oven to 325 degrees F and press the graham crumbs into a springform pan.
  2. Beat the cream cheese and sugar until completely smooth.
  3. Add the eggs one at a time, mixing on low after each.
  4. Blend in the sour cream and vanilla until silky.
  5. Pour over the crust and bake in a water bath for 65 to 70 minutes until the center barely jiggles.
  6. Turn off the oven and let it cool inside, then chill at least 4 hours before serving.

Notes

A water bath is the secret to a crack-free top.
