Ingredients
  

  • 20 large sea scallops side muscles removed
  • 10 slices thin-cut bacon halved crosswise
  • 3 tablespoons maple syrup
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley chopped
  • Toothpicks for securing

Method
 

  1. Pat the scallops completely dry with paper towels (this is super important for getting a good sear!).
  2. In a small bowl, whisk together maple syrup, brown sugar, soy sauce, Dijon mustard, and garlic powder. Set aside.
  3. Wrap each scallop with a half slice of bacon and secure with a toothpick.
  4. Season the wrapped scallops lightly with black pepper.
  5. Heat olive oil in a large skillet over medium-high heat until it's nice and hot.
  6. Working in batches if needed, place scallops in the skillet and cook for 3-4 minutes on the first side until bacon starts to crisp.
  7. Flip carefully and cook another 3-4 minutes on the other side.
  8. Reduce heat to medium and brush the scallops generously with the maple glaze.
  9. Cook for another 1-2 minutes, turning to coat evenly, until the glaze is sticky and caramelized.
  10. Remove from heat, drizzle with fresh lemon juice, sprinkle with parsley, and serve immediately while they're hot and amazing!
