Pat the scallops completely dry with paper towels (this is super important for getting a good sear!).
In a small bowl, whisk together maple syrup, brown sugar, soy sauce, Dijon mustard, and garlic powder. Set aside.
Wrap each scallop with a half slice of bacon and secure with a toothpick.
Season the wrapped scallops lightly with black pepper.
Heat olive oil in a large skillet over medium-high heat until it's nice and hot.
Working in batches if needed, place scallops in the skillet and cook for 3-4 minutes on the first side until bacon starts to crisp.
Flip carefully and cook another 3-4 minutes on the other side.
Reduce heat to medium and brush the scallops generously with the maple glaze.
Cook for another 1-2 minutes, turning to coat evenly, until the glaze is sticky and caramelized.
Remove from heat, drizzle with fresh lemon juice, sprinkle with parsley, and serve immediately while they're hot and amazing!
