Herb Crusted Lamb Chops

Ingredients
  

  • 8 lamb rib chops about 2 pounds total
  • 3 tablespoons olive oil divided
  • 1/2 cup panko breadcrumbs
  • 3 tablespoons fresh rosemary finely chopped
  • 2 tablespoons fresh thyme leaves
  • 3 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons Dijon mustard

Method
 

  1. Remove lamb chops from refrigerator and let sit at room temperature for 15 minutes. Pat dry with paper towels and season both sides with salt and pepper.
  2. In a small bowl, combine panko breadcrumbs, rosemary, thyme, garlic, and 2 tablespoons of olive oil. Mix until the herbs are evenly distributed.
  3. Heat remaining 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Sear lamb chops for 2 minutes per side until browned.
  4. Brush the top of each lamb chop with Dijon mustard, then press the herb mixture firmly onto the mustard-coated side.
  5. Transfer the skillet to a preheated 400°F oven and roast for 5-7 minutes for medium-rare (130°F internal temperature), or until desired doneness.
  6. Remove from oven, tent loosely with foil, and let rest for 5 minutes before serving.
