Grilled Lemon Herb Chicken

Grilled chicken breasts that are juicy and super meaty made with garlic and lemon marinade along with herbs for a deliciously clean meal.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 1 lemon juiced and zested
  • 3 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Whisk olive oil, lemon juice and zest, garlic, herbs, salt, and pepper in a bowl.
  2. Add the chicken, turn to coat, and marinate at least 20 minutes (or up to 4 hours in the fridge).
  3. Heat a grill or grill pan to medium-high and oil the grates.
  4. Grill the chicken 6-7 minutes per side, until charred and 165°F inside.
  5. Rest 5 minutes, then slice and serve with extra lemon.

Notes

Pounding the breasts to an even thickness helps them cook evenly and stay juicy.
