Gluten-Free Strawberry Bars

Strawberry cheesecake bars, gluten free with an almond base and topped with fresh strawberries.

Ingredients
  

  • 2 cups almond flour
  • 5 tbsp butter melted
  • 3 tbsp sugar for crust
  • 16 oz cream cheese softened
  • 0.5 cup sugar for filling
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups strawberries diced
  • 3 tbsp sugar for topping
  • 1 tsp cornstarch

Method
 

  1. Heat oven to 325F and line a 9x9 pan with parchment.
  2. Mix almond flour, butter, and 3 tbsp sugar, press into the pan, and bake 10 minutes.
  3. Beat cream cheese and 1/2 cup sugar until smooth, then add eggs and vanilla.
  4. Pour over the crust and bake 28 to 30 minutes until just set.
  5. Cook strawberries, 3 tbsp sugar, and cornstarch into a thick sauce, then cool.
  6. Spread strawberry sauce over the cooled cheesecake layer.
  7. Chill at least 4 hours before cutting into bars.

Notes

Almond crusts brown fast, so tent with foil if the edges darken.
