Garlic Butter Shrimp Scampi

Ingredients
  

  • pounds large shrimp peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cloves garlic minced
  • ½ cup dry white wine or chicken broth
  • ¼ cup fresh lemon juice
  • ¼ teaspoon red pepper flakes
  • ¼ cup fresh parsley chopped
  • Salt and black pepper to taste
  • 12 ounces cooked pasta for serving

Method
 

  1. Pat shrimp dry and season with salt and black pepper on both sides.
  2. Heat butter and olive oil in a large skillet over medium-high heat until butter is melted and foamy.
  3. Add minced garlic and red pepper flakes, cooking for 30 seconds until fragrant but not browned.
  4. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque, then remove to a plate.
  5. Pour white wine and lemon juice into the skillet, stirring to scrape up any browned bits, and simmer for 2 minutes until slightly reduced.
  6. Return shrimp to the pan along with fresh parsley, tossing to coat in the sauce.
  7. Serve immediately over cooked pasta or with crusty bread, spooning extra sauce over the top.
