Frozen Strawberry Cheesecake Bites

Served directly from the freezer, these creamy strawberry cheesecake bites, rest on a delicious graham cracker crust.

Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 16 oz cream cheese softened
  • 0.75 cup sugar
  • 1 tsp vanilla extract
  • 8 oz whipped topping thawed
  • 2 cups strawberries pureed

Method
 

  1. Press graham crumbs and melted butter into a parchment-lined 9x9 pan.
  2. Beat cream cheese, sugar, and vanilla until smooth.
  3. Blend in the strawberry puree until evenly pink.
  4. Fold in the whipped topping until light and fluffy.
  5. Spread the filling over the crust and smooth the top.
  6. Freeze at least 6 hours, or overnight, until solid.
  7. Cut into bites and serve frozen.

Notes

Let them sit 5 minutes before slicing so the knife glides through.
