Frozen Peppermint Cheesecake Bars

These are the grown-up treat on the table that kids still get to help make — they can crush the crust, help pour the filling, and sprinkle candy canes on top. The bars set in the freezer so there's no oven, no water bath, no drama. Cut them into bars and serve straight from the freezer.

Ingredients
  

  • 2 cups chocolate sandwich cookie crumbs
  • 4 tablespoons unsalted butter melted
  • 16 ounces cream cheese softened
  • 1 cup powdered sugar
  • 1 1/2 teaspoons peppermint extract
  • 2 cups heavy whipping cream
  • 1/2 cup crushed candy canes
  • Red food coloring optional, a few drops

Method
 

  1. Line a 9x13-inch pan with parchment paper.
  2. Mix cookie crumbs and melted butter together and press firmly into the bottom of the pan. Freeze for 10 minutes.
  3. Beat cream cheese, powdered sugar, and peppermint extract together until smooth.
  4. In a separate bowl, whip heavy cream to stiff peaks, then fold into the cream cheese mixture.
  5. Add a few drops of red food coloring if desired and fold until marbled.
  6. Spread filling over the crust and smooth the top.
  7. Scatter crushed candy canes over the top, cover, and freeze for at least 4 hours before cutting into bars.
