Classic New York Style Sour Cream Cheesecake

A cheesecake is made with smooth sour cream baked until just set and has a buttery graham crust.

Cook Time 1 hour 10 minutes
Total Time 1 hour 35 minutes
Servings: 12 slices

Ingredients
  

  • 1.5 cups graham cracker crumbs
  • 6 tbsp butter melted
  • 32 oz cream cheese softened
  • 1 cup sugar
  • 1 cup sour cream
  • 3 eggs
  • 1 tsp vanilla

Method
 

  1. Mix the graham crumbs and butter, press into a springform pan, and chill.
  2. Beat the cream cheese and sugar until smooth.
  3. Blend in the sour cream and vanilla, then add the eggs one at a time.
  4. Pour over the crust and bake at 325F for about 70 minutes until the center is just set.
  5. Turn off the oven and let it cool inside with the door cracked.
  6. Chill at least 4 hours or overnight before slicing.

Notes

A water bath keeps the top crack-free.
