Classic Bruschetta with Twist

I've given the traditional bruschetta a festive makeover with cranberries and a touch of honey – it's the perfect marriage of classic Italian and Christmas flavors! This appetizer is fancy enough to impress your guests but easy enough that you won't be stressed in the kitchen.

Ingredients
  

  • 1 French baguette sliced into 16 pieces (1/2-inch thick)
  • 3 cups Roma tomatoes diced
  • 1/2 cup dried cranberries chopped
  • 1/3 cup fresh basil chopped
  • 3 cloves garlic minced
  • 1/4 cup extra virgin olive oil plus extra for brushing
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 4 ounces goat cheese or cream cheese softened
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Arrange baguette slices on the baking sheet and brush lightly with olive oil on both sides.
  3. Toast in the oven for 6-8 minutes, flipping halfway through, until golden and crispy.
  4. While the bread toasts, combine diced tomatoes, chopped cranberries, basil, and minced garlic in a medium bowl.
  5. In a small bowl, whisk together the 1/4 cup olive oil, balsamic vinegar, honey, salt, and pepper.
  6. Pour the dressing over the tomato mixture and toss gently to combine, then let it marinate for 10 minutes.
  7. Spread a thin layer of softened goat cheese or cream cheese on each toasted baguette slice.
  8. Using a slotted spoon, top each piece with the tomato-cranberry mixture, letting excess liquid drain off.
  9. Arrange on a serving platter and garnish with fresh chopped parsley.
  10. Serve immediately while the bread is still crispy, or keep the components separate until ready to serve.
