Classic Beef and Barley

Barley and tender ground beef cooked in a delicious broth with vegetables.

Ingredients
  

  • 1 lb ground beef
  • 1 onion diced
  • 2 carrots diced
  • 2 stalks celery diced
  • 0.75 cup pearl barley
  • 6 cups beef broth
  • 1 tsp thyme
  • salt and pepper to taste

Method
 

  1. Brown the ground beef in a large pot, then drain excess fat.
  2. Add the onion, carrots, and celery and saute until softened.
  3. Stir in the barley, beef broth, and thyme.
  4. Bring to a boil, then reduce and simmer 40 minutes until the barley is tender.
  5. Season with salt and pepper and serve hot.

Notes

The barley keeps absorbing liquid, so add more broth when reheating leftovers.
