A quick weeknight chicken teriyaki bowl made with air-fried chicken, rice, and steamed veggies, coated in your favorite teriyaki marinade or sauce.
Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings: 4 servings

Ingredients

  • 1 lb* chicken breast cut into bite-sized pieces
  • 1 tablespoon* vegetable oil for misting chicken
  • 1 teaspoon* original Mrs. Dash seasoning
  • 1/4 teaspoon* black pepper
  • 1 cup* instant white rice prepared according to package instructions
  • 1 bag* steamable broccoli microwave steamed
  • 1 bag* steamable edamame seeds removed from pods
  • 1/2 cup* carrots chopped
  • 1/4 cup* teriyaki marinade or sauce enough to coat chicken thoroughly
  • 1 teaspoon* sesame seeds for topping
  • 1 tablespoon* soy sauce for serving
  • 1 teaspoon* sriracha for serving

Method

  1. Cut your chicken into bite-sized pieces and add it to the air fryer, using a liner for easier cleanup.
  2. Mist the chicken with vegetable oil and season with original Mrs. Dash and black pepper.
  3. Air fry the chicken at 400 degrees for 15 minutes, flipping halfway through.
  4. While the chicken cooks, prepare instant white rice according to package instructions and steam broccoli and edamame in steamable bags in the microwave.
  5. Add your cooked chicken to a bowl and season it with teriyaki, adding as much as you need to coat the chicken thoroughly (marinade or sauce both work).
  6. Take the edamame seeds out of the pods for easier serving and eating.
  7. Build your bowl by adding half a cup of cooked rice to the bottom, then four ounces of cooked chicken, then your veggies.
  8. Add broccoli and carrots for a pop of color, top with sesame seeds, and serve with soy sauce and sriracha.

I went with a teriyaki marinade here as my kiddos are not fans of the sticky teriyaki sauce, but either one will do the trick.
