Cherry and Goat Cheese Tartlets

Puff pastry shells that are crispy and crunchy, contain creamy gooey goat cheese and sweet roasted cherries.

Servings: 12 tartlets

Ingredients
  

  • 1 sheet puff pastry thawed
  • 4 oz goat cheese softened
  • 1.5 cups fresh cherries pitted and halved
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves

Method
 

  1. Preheat the oven to 400 degrees F and cut the puff pastry into 12 squares, pressing them into a mini muffin tin.
  2. Spoon a little goat cheese into each pastry cup.
  3. Top with halved cherries and a drizzle of honey.
  4. Bake for 12-15 minutes until golden, then sprinkle with thyme and serve warm.

Notes

Let them cool a few minutes so the cherries don't burn little mouths.
