Cappuccino Cheesecake

A creamy cheesecake with an espresso infusion and a dusting of cocoa to capture the essence of your favorite coffee house treat.

Ingredients
  

  • 1.75 cups chocolate cookie crumbs
  • 24 oz cream cheese softened
  • 1 cup sugar
  • 3 eggs
  • 2 tbsp instant espresso powder
  • 1 tsp cocoa powder for dusting

Method
 

  1. Preheat the oven to 325 degrees F and press the cookie crumbs into a springform pan.
  2. Dissolve the espresso powder in a tablespoon of hot water.
  3. Beat the cream cheese and sugar until smooth, then add the eggs one at a time.
  4. Mix in the dissolved espresso.
  5. Pour over the crust and bake for 55 to 60 minutes until set.
  6. Cool, chill at least 4 hours, then dust with cocoa powder before serving.

Notes

Pipe whipped cream around the edge for a true cappuccino look.
