Broccoli Chowder with Bacon Bits

Thick and hearty broccoli chowder with lots of crisp bacon bits and potatoes.

Ingredients
  

  • 4 cups broccoli florets
  • 2 potatoes diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 6 slices bacon cooked and crumbled
  • 1 onion diced
  • 3 tbsp flour

Method
 

  1. Cook the bacon until crisp, then set it aside and reserve a little fat in the pot.
  2. Soften the onion in the bacon fat for 4 minutes, then whisk in the flour.
  3. Add the potatoes and broth and simmer 12 minutes.
  4. Add the broccoli and simmer 12 more minutes until tender, then lightly mash for a chunky chowder.
  5. Stir in the cream, ladle into bowls, and top with crumbled bacon.

Notes

Keep it chunky rather than fully blended for true chowder vibes.
