Bread Flour Tall Towers

Ingredients
  

  • 2 1/2 cups bread flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup unsalted butter melted and slightly cooled
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 cups semi-sweet chocolate chips

Method
 

  1. Preheat oven to 325°F and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together bread flour, baking soda, and salt until well combined.
  3. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
  4. Add the egg, egg yolk, and vanilla extract to the butter mixture and whisk vigorously until mixture is glossy and well combined.
  5. Add the dry ingredients to the wet ingredients and stir with a wooden spoon or spatula until just combined.
  6. Fold in chocolate chips, then refrigerate dough for 15 minutes to firm up slightly.
  7. Scoop dough into 1/4 cup portions and roll into tall balls, then place 3 inches apart on prepared baking sheets.
  8. Bake for 12-13 minutes until edges are golden brown but centers still look slightly underbaked, then let cool on baking sheets for 10 minutes before transferring to wire racks.
