- Instructions: 1 In a large pan or wok, heat a tablespoon of oil over medium-high heat.
- Add the thinly sliced chicken breasts to the pan. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.
- Add the minced garlic to the pan and cook for an additional minute until fragrant.
- Toss in the sliced bell peppers and continue to cook, stirring frequently, for another 3-4 minutes until they are just tender.
- Pour the soy sauce over the chicken and veggies, stirring well to coat everything evenly. Cook for another 2 minutes.
- Serve the stir-fry over the cooked rice.
- Notes: You can swap out the bell peppers for broccoli, snap peas, or any other veggie you love. Add a pinch of red pepper flakes if you like a spicy kick. This dish is perfect for meal prepping. Just store in individual containers and reheat as needed.
