5-Ingredient Chicken Stir-Fry

Ingredients
  

  • 1 lb boneless skinless chicken breasts, thinly sliced
  • 2 bell peppers any color, sliced
  • 1/4 cup soy sauce
  • 2 cloves garlic minced
  • 2 cups cooked rice

Method
 

  1. Instructions: 1 In a large pan or wok, heat a tablespoon of oil over medium-high heat.
  2. Add the thinly sliced chicken breasts to the pan. Cook for about 5-7 minutes, stirring occasionally, until the chicken is no longer pink.
  3. Add the minced garlic to the pan and cook for an additional minute until fragrant.
  4. Toss in the sliced bell peppers and continue to cook, stirring frequently, for another 3-4 minutes until they are just tender.
  5. Pour the soy sauce over the chicken and veggies, stirring well to coat everything evenly. Cook for another 2 minutes.
  6. Serve the stir-fry over the cooked rice.
  7. Notes: You can swap out the bell peppers for broccoli, snap peas, or any other veggie you love. Add a pinch of red pepper flakes if you like a spicy kick. This dish is perfect for meal prepping. Just store in individual containers and reheat as needed.
