4) Sheet-pan Costco Meatballs tossed in grape jelly and chili sauce

Ingredients
  

  • 2 lb Costco frozen meatballs about 24–30 meatballs
  • 1 cup grape jelly
  • 1/2 cup sweet chili sauce store-bought
  • 1 tbsp soy sauce
  • 1 tsp apple cider vinegar
  • 1 tbsp olive oil for sheet pan
  • Optional: sesame seeds and chopped scallions for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a sheet pan with foil and lightly oil.
  2. Arrange frozen meatballs in a single layer and roast 18–22 minutes until heated through and slightly browned.
  3. While meatballs roast, stir together grape jelly, chili sauce, soy sauce, and vinegar in a small saucepan. Warm gently until smooth.
  4. Transfer hot meatballs to a large bowl, pour sauce over, and toss to coat evenly.
  5. Return to the sheet pan and bake 3–5 more minutes so sauce clings. Garnish if desired and serve warm.
