30-Minute Taco Quesadillas

Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup canned black beans drained and rinsed
  • 2 cups shredded cheddar cheese
  • 8 large flour tortillas
  • Optional toppings: sour cream salsa, guacamole

Method
 

  1. Instructions: 1 In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water to the beef. Stir well and let simmer for about 5 minutes until the mixture thickens.
  3. Add the black beans to the beef mixture and stir until well combined. Cook for another 2-3 minutes, then remove from heat.
  4. Preheat a large, non-stick skillet or griddle over medium heat.
  5. Place a tortilla on the skillet, sprinkle with 1/4 cup of shredded cheese.
  6. Add 1/4 of the beef and bean mixture on top of the cheese.
  7. Sprinkle another 1/4 cup of cheese over the beef mixture, and top with another tortilla.
  8. Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
  9. Repeat with the remaining tortillas and filling.
  10. Cut each quesadilla into wedges and serve hot with your favorite toppings like sour cream, salsa, or guacamole.
  11. Notes: You can customize these by adding corn, bell peppers, or even some spicy jalapeƱos for an extra kick. Perfect for a quick weeknight dinner or a fun twist on taco night. These are also great as leftovers, just heat them up in a skillet to keep them crispy!
