- Instructions: 1 In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the beef. Stir well and let simmer for about 5 minutes until the mixture thickens.
- Add the black beans to the beef mixture and stir until well combined. Cook for another 2-3 minutes, then remove from heat.
- Preheat a large, non-stick skillet or griddle over medium heat.
- Place a tortilla on the skillet, sprinkle with 1/4 cup of shredded cheese.
- Add 1/4 of the beef and bean mixture on top of the cheese.
- Sprinkle another 1/4 cup of cheese over the beef mixture, and top with another tortilla.
- Cook for about 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve hot with your favorite toppings like sour cream, salsa, or guacamole.
- Notes: You can customize these by adding corn, bell peppers, or even some spicy jalapeƱos for an extra kick. Perfect for a quick weeknight dinner or a fun twist on taco night. These are also great as leftovers, just heat them up in a skillet to keep them crispy!
