15-Minute Veggie Omelet

Ingredients
  

  • 3 large eggs
  • 1/4 cup diced bell peppers any color
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped spinach
  • 1/4 cup shredded cheddar cheese
  • 1 tbsp olive oil or butter
  • Salt and pepper to taste

Method
 

  1. Instructions: 1 In a medium bowl, whisk together the eggs with a pinch of salt and pepper.
  2. Heat the olive oil or butter in a non-stick skillet over medium heat.
  3. Add the diced bell peppers and chopped spinach to the skillet. Sauté for about 2-3 minutes, until the vegetables are tender.
  4. Pour the egg mixture over the sautéed vegetables, tilting the pan to distribute the eggs evenly.
  5. Cook for about 2-3 minutes, until the eggs start to set on the edges.
  6. Sprinkle the diced tomatoes and shredded cheddar cheese over one half of the omelet.
  7. Using a spatula, gently fold the other half of the omelet over the filling.
  8. Cook for another 1-2 minutes, until the cheese is melted and the eggs are fully cooked.
  9. Slide the omelet onto a plate and serve immediately. Enjoy!
  10. Notes: You can customize this omelet with any veggies you have on hand—mushrooms, onions, or zucchini work great too! For extra protein, add some cooked chicken or turkey slices. Serve with a side of toast or a fresh salad for a complete meal.
