12) BBQ pulled pork (vacuum-sealed)

Ingredients
  

  • 3 lb cooked pulled pork shredded
  • 2 cups BBQ sauce your favorite
  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Four vacuum-seal bags approximately 12 oz of pork per bag

Method
 

  1. Use fully chilled cooked pulled pork. Combine it with the BBQ sauce, vinegar, brown sugar, paprika, salt, and pepper.
  2. Divide the cold pork mixture among four vacuum-seal bags and seal them.
  3. Keep refrigerated until the trip, or freeze promptly. Transport at 40°F (4°C) or below in an ice-packed cooler.
  4. Thaw in the refrigerator, or in a leak-proof bag submerged in cold water that is changed every 30 minutes. Open the bag, transfer the pork to a pot, and reheat to 165°F (74°C), stirring often.
  5. Stir and serve on buns or rice.
