This is also a good place to use up whatever cheese needs finishing in the fridge: a bit of gruyere, some parmesan; nothing gets wasted. If you want the broccoli to stay green and not turn gray, add it in the last 30 to 45 minutes. The slow cooker will completely destroy it if it goes in at the start. The stalks go in a little earlier than the florets, since they take longer to soften.

Mulligatawny comes from the Tamil words *milagu* and *tanni*, which mean pepper water. It started as a thin spice broth that British colonials in India turned into something much heartier to serve as a proper soup course at dinner. Lentils, apple, curry spices, and a good stock go into the slow cooker, making a deeply fragrant soup. The lentils break down naturally and thicken everything without any help from you. The apple does the same thing; it just softens the edges of the spice.
I like to serve the soup over some jasmine rice to make it a proper meal, or alongside some naan to mop it up and make it more of an experience. A swirl of yogurt at the end cuts right through the warmth.
21) Crockpot Clam Chowder with Bacon

Two types of clams work well for this recipe: either the small hot clams or the newer cultivated Malia ones, which are even smaller and have black oval shells with ombre stretch striping and a thoroughly delicious flavor. Potatoes and bacon go in at the start, four to five hours on low, six maximum. Clams and dairy go in only during the last 45 minutes. That's a rule. Clams added too early turn a little rubbery, and there's nothing you can do to fix that.
If you want to leave out the bacon, you absolutely can. It's still a great soup, with a little smoked paprika added to bring back some of that smokiness. Cream goes in at the end, never at the start. Serve with oyster crackers if you can find them, or crusty sourdough if you can't.
22) Turkey, Wild Rice, and Cranberry Crockpot Soup

You've got your beef, your beans, your tomato, your standard spices, but the cocoa and espresso are what make the difference. It doesn't make it taste like chocolate or coffee; it just adds a richness and a depth to the beef that's hard to put a finger on.
A tablespoon of each goes in at the start. Round up your beef first before it goes in the slow cooker. It's an extra step, but it makes a real difference to the flavor. For the heat, you want it smoking rather than just hot, which really works well here. Taste before you serve and adjust, because it almost always needs a little tweaking.

- Heat oil in a skillet over medium. Sauté onion, carrots, and celery 5 minutes until slightly soft.
- Add garlic and cook 1 minute. Transfer vegetables to crockpot.
- Add tomatoes, beans, broth, oregano, salt, and pepper to crockpot. Stir.
- Cook on low 6–7 hours or high 3–4 hours.
- Thirty minutes before serving, stir in pasta and kale. Cover and cook until pasta is tender.
- Turn off crockpot. Stir in pesto. Taste and adjust salt and pepper.
This is my fridge-risk soup for when the vegetable drawer is getting away from me. When you have a couple of zucchini going soft, half a cabbage, some beans that need using, minestrone is the answer. It was invented for exactly this.
Add some pasta at the end, finish it with a drizzle of olive oil, and some of that fresh pepper and frozen pesto you have in the freezer. You don't always need meat in a minestrone. This is a great soup to make because you can prep everything in the morning for such an easy dinner. It's great with a lovely toasted baguette, or even some delicious garlic bread from your freezer.
25) Crockpot Pozole with Hominy and Shredded Pork

- Season pork with salt and pepper. Place pork, onion, garlic, hominy, spices, bay leaves, and broth in the crockpot.
- Cover and cook on low for 7–8 hours or high for 4 hours.
- Remove pork to a cutting board, shred with two forks, and discard any large fat pieces.
- Return shredded pork to the crockpot, stir, and taste for salt. Remove bay leaves.
- Serve with lime wedges, chopped cabbage, radishes, and chopped cilantro if you like.
This one has a cool background. Pozole goes back to the Aztecs, where it was considered sacred and used in ceremonies. The word comes from the Nahuatl word for hominy, which is that big dried corn kernel you can't really substitute with anything else. It's been feeding crowds for thousands of years, and it shows.
Pork shoulder is the cut to use here. It falls apart on its own after enough time in the crockpot, and for the last two hours, the fun part begins: setting out the toppings. Shredded cabbage, radishes, lime. Everyone builds their own bowl. It's perfect for a crowd, and honestly, very little work.
