Zucchini Chocolate Chip Vegan Brownies

Brownies that are moist and chocolaty. You would never guess there is shredded zucchini hidden inside these brownies! Plus, there are chocolate chips scattered throughout.

Ingredients
  

  • 1 cup flour
  • 1/2 cup cocoa powder
  • 3/4 cup sugar
  • 1.5 cups zucchini grated
  • 1/3 cup melted coconut oil
  • 1 tsp vanilla
  • 3/4 cup chocolate chips

Method
 

  1. Preheat the oven to 350F and line an 8x8 pan with parchment.
  2. Squeeze the excess moisture from the grated zucchini with a clean towel.
  3. Whisk the flour, cocoa, and sugar, then stir in the coconut oil, zucchini, and vanilla.
  4. Fold in the chocolate chips and spread the batter in the pan.
  5. Bake for 30 to 32 minutes until the center is set.
  6. Cool fully, then chill briefly before cutting into squares.

Notes

Wring the zucchini out well or the brownies turn cakey and wet.
