Ingredients
Method
- Heat oven to 350°F. Line the pan with parchment and lightly grease it. Dust a clean towel with the extra tablespoon of cocoa.
- Beat eggs and sugar with a mixer on high for 4–5 minutes until thick and pale. Whisk flour, cocoa, baking powder and salt separately. Fold into the eggs gently. Mix oil, milk and vanilla, then fold into the batter just until even.
- Spread batter evenly in the pan. Bake 10–12 minutes until the center springs back lightly; do not overbake.
- Immediately loosen the edges and invert onto the towel. Peel off parchment. Starting at a short end, roll up the warm cake with the towel inside. Cool about 45 minutes.
- Unroll carefully. Spread 1 cup frosting over the cake, leaving a 1/2-inch border. Reroll without the towel. Chill about 1 hour.
- Spread remaining frosting thinly over the roll, mark bark lines with a fork and cut into 12 slices. Decorate with optional cranberries and rosemary; remove woody sprigs before eating.
