Yule Log Cake

A sponge cake that is rolled and filled with cream and then finished with frosting to look like a traditional yule log.

Servings: 10 slices

Ingredients
  

  • 4 eggs
  • 0.75 cup sugar
  • 0.5 cup all-purpose flour
  • 0.25 cup cocoa powder
  • 1.5 cups heavy cream
  • 8 oz chocolate melted
  • 2 tbsp butter
  • 1 cup powdered sugar for dusting

Method
 

  1. Beat the eggs and sugar until thick and pale.
  2. Fold in the flour and cocoa, then spread onto a lined sheet pan.
  3. Bake at 375F for 10 to 12 minutes, then roll the warm sponge in a towel.
  4. Whip the cream, unroll the cooled sponge, spread the cream, and re-roll.
  5. Frost the outside with the melted chocolate beaten with butter.
  6. Drag a fork through the frosting for bark and dust with powdered sugar snow.

Notes

Rolling the warm cake first trains it so it won't crack later.
