Servings: 6 servings

Ingredients

  • 3 cups cooked turkey diced
  • 2 tablespoons butter
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups frozen mixed vegetables carrots, peas, corn, green beans
  • 3 tablespoons all-purpose flour
  • 2 cups chicken or turkey broth
  • 1/2 cup whole milk or heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 4 cups prepared mashed potatoes
  • 1/2 cup shredded cheddar cheese optional

Method

  1. Preheat your oven to 375°F and lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, melt the butter. Add the onion and cook until softened, about 5 minutes. Toss in the garlic and cook for another minute until fragrant.
  3. Sprinkle the flour over the onion mixture and stir well to coat. Cook for 1-2 minutes to get rid of the raw flour taste.
  4. Gradually pour in the broth and milk, whisking constantly to avoid lumps. Bring to a simmer and cook until the sauce thickens, about 3-4 minutes.
  5. Stir in the turkey, frozen vegetables, thyme, salt, and pepper. Let everything warm through for about 3 minutes, then remove from heat.
  6. Pour the turkey mixture into your prepared baking dish and spread it evenly.
  7. Spread the mashed potatoes over the top, creating peaks and swirls with a spoon or spatula (those crispy bits are the best!). If using cheese, sprinkle it over the potatoes.
  8. Bake for 25-30 minutes until the top is golden and the filling is bubbling around the edges. Let it rest for 5 minutes before serving.
