Ingredients
  

  • 4 cups water or milk or a combination
  • 1 cup polenta or coarse cornmeal
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Toppings: fresh berries sliced bananas, chopped nuts, brown sugar, or a drizzle of cream

Method
 

  1. In a medium saucepan, bring the water (or milk) and salt to a boil over medium-high heat.
  2. Gradually whisk in the polenta in a slow, steady stream to prevent lumps from forming. Keep whisking constantly during this step!
  3. Reduce heat to low and continue cooking, stirring frequently with a wooden spoon, for 15-20 minutes until the polenta is thick and creamy. It should pull away from the sides of the pan.
  4. Remove from heat and stir in the butter, maple syrup, vanilla extract, and cinnamon until well combined and the butter has melted.
  5. If the polenta is too thick, add a splash of milk or water to reach your desired consistency. Remember, it will thicken a bit as it cools.
  6. Divide the warm polenta among four bowls and add your favorite toppings. Fresh berries and a drizzle of honey make it feel extra special on those cold mornings!
