Veggie Stir-Fry

Stir-fried mixed vegetables in a soy-garlic-ginger sauce over rice make a simple meatless dinner.

Ingredients
  

  • 2 tbsp vegetable oil
  • 3 cups frozen stir-fry vegetables
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 3 tbsp soy sauce
  • 1 tsp honey
  • 2 cups cooked rice

Method
 

  1. Heat the vegetable oil in a large skillet over high heat.
  2. Add the frozen vegetables and stir-fry for five minutes until heated through.
  3. Stir in the garlic and ginger and cook for one minute.
  4. Pour in the soy sauce and honey and toss to coat.
  5. Cook for two more minutes until the veggies are glazed and tender-crisp.
  6. Serve over the cooked rice.

Notes

Keep the heat high so the veggies stay crisp instead of mushy.
