- In a medium saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat to low.
- Cover and simmer for 15-20 minutes, or until the rice is cooked and the water is absorbed.
- While the rice is cooking, microwave the mixed frozen vegetables according to package instructions, or cook them in a small saucepan until tender. Drain any excess water.
- Once the rice is cooked, fluff it with a fork and stir in the butter until melted.
- Add the cooked mixed vegetables to the rice. Stir in the garlic powder, salt, and black pepper until well combined.
- If using, sprinkle with chopped fresh parsley for a burst of color and flavor.
- Serve warm and enjoy your delicious and nutritious veggie-packed rice pilaf!
Notes
Feel free to use fresh vegetables if you prefer. Just chop them finely and cook until tender before adding to the rice. You can substitute the butter with olive oil for a dairy-free version. This pilaf is versatile and pairs well with grilled chicken, fish, or tofu.
