Vegetable Chow Mein

Ingredients
  

  • 12 oz fresh chow mein noodles or dried egg noodles
  • 3 tablespoons vegetable oil divided
  • 3 cups shredded cabbage
  • 1 large red bell pepper thinly sliced
  • 2 medium carrots julienned
  • 1 cup snap peas trimmed
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger minced
  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce vegetarian version
  • 1 tablespoon sesame oil
  • 2 green onions sliced

Method
 

  1. Cook the noodles according to package directions, drain, and toss with 1 tablespoon of vegetable oil to prevent sticking. Set aside.
  2. Heat a large wok or skillet over high heat until smoking hot. Add 1 tablespoon of vegetable oil and swirl to coat.
  3. Add the cabbage, bell pepper, carrots, and snap peas. Stir-fry for 3-4 minutes until vegetables are tender-crisp and slightly charred. Remove vegetables to a plate.
  4. Add the remaining 1 tablespoon of oil to the wok. Add garlic and ginger and stir-fry for 30 seconds until fragrant.
  5. Add the cooked noodles to the wok and stir-fry for 2 minutes, allowing them to get slightly crispy in spots.
  6. Return the vegetables to the wok and add soy sauce, oyster sauce, and sesame oil. Toss everything together for 1-2 minutes until well combined and heated through.
  7. Garnish with sliced green onions and serve immediately while hot.
